Banana Coconut Popsicles

Makes 6-7 popsicles

Banana Coconut Popsicles


1 can coconut milk (full fat)
1 ripe banana
1 tsp vanilla
¼ tsp salt
Popsicle mould



Add all ingredients to a blender and blend until smooth. Depending on the ripeness of your banana, you may want to add sweetener of choice (if you’re using xylitol, grind it first to a fine powder).  Pour into popsicle mould and let freeze for at least 4 hours. If you do not have popsicle moulds, you can pour the mixture into an ice tray and put popsicle sticks in (on a slant, or wait until mixture freezes slightly).

This recipe can be easily modified for any tastes! Add some berries, mango, pineapple, cocoa, almond butter or peanut butter… Dip it in melted chocolate… The possibilities are endless!
